Healthy Pizza

Post  Admin on Thu Jan 21, 2010 9:31 pm

This recipe for pizza dough was given to me many years ago by a good friend. It has been a firm family favourite through the years because it's easy to make and well worth the effort. Very Happy

PIZZA DOUGH
(makes 3 large pizzas)

4 cups of wholemeal flour (preferably organic)
1 teaspoon seasalt or low sodium salt
4 tablespoons of olive oil
1 teaspoon of runny honey
2 packs of dried yeast
1 and a half to 2 cups of warm water

TOPPING
4 400g tins of chopped tomatoes
Italian herb seasoning (oregano, thyme...)

Mix flour with salt in large mixing bowl. Add dried yeast to one cup of warm water with honey and stir. Pour oil onto flour. Add dried yeast mixture to flour and mix well. Knead for 4-5 minutes. Cover bowl with clean damp teatowel and leave in warm place for at least an hour. Grease 3 large pizza dishes with olive oil. Roll out dough mixture and place in dishes.

Drain tinned tomatoes and spread over the pizza bases. Sprinkle herbs on top of the tomatoes. Then add any of the following options...

Tuna/salmon/mackerel
Chicken/turkey breast/thinly sliced beef
Mushrooms/sweetcorn/peppers(red, green, yellow)/asparagus/broccoli/onion/garlic

Finish with 6oz of grated mozzerella cheese. (You can buy this in pre-grated packets at the supermarkets) Sprinkle parsley on each pizza then bake in pre-heated oven at 180 degrees/gas mark 7-8 for 20-30 minutes until brown and bubbly! Serve with a large green salad!

Apple and Grilled Chicken Pizza
I made some minor changes to it though.
What you need:
Pizza crust (I used Boboli pizza crust, 12 in)
One chicken breast
One green apple
Shredded cheddar cheese
Prego spaghetti sauce

Directions:
1. Grill the chicken until cooked all the way. Cut into small pieces (how large you went them is up to you, I cut mine pretty small).
2. Slice the apples as thin as you can.
3. Spread the spaghetti sauce on the pizza crust. Add the cheese, chicken, and apple slices. Add as much as you want. I didn't use all of the apple slices, but I did use all of the chicken and a lot of cheese.
4. Preheat the oven to 450 degrees.
5. When heated, put the pizza in the oven and cook for 10-15 minutes, or until the cheese is melted as you like.
I was a little unsure of how this pizza would turn out. I never thought apples and chicken would make a good pizza, but this pizza is absolutely delicious! It almost has a hawaiian pizza taste to it. It takes about 20 minutes to make and is very easy. I sliced the apples and preheated the oven while I was cooking the chicken.

Dear Garison87

Thanks for your recipe - the combination of chicken with apple sounds rather nice! Not heard of Boboli pizza base - but if it is made of white flour it is much healthier to make a wholemeal base as it contains way more fibre and B vitamins and won't contain chlorine to whiten it.
